Apple Pie Cupcakes

The day after Thanksgiving we were invited over to the neighbors house for a fish fry. How Wisconsin-y, huh? It was so nice not to have to eat leftovers. (not that I was going to anyway, haha) I HATE leftovers.

Of course I can’t go anywhere empty-handed so I decided to whip up some Rice Krispies Treats for the kids. I made HUGE ones. I did a double batch just so I didn’t have any cereal leftover, and smooshed all of it into a 9×13 inch pan. So they turned out to be about 2 inches tall. And so colorful! I added my favorite mix-in of all time, Birthday Cake Crumb and rainbow sprinkles. I’m on a Rice Krispies Treats kick lately. I don’t know why I avoided making these for so long. They are the perfect blank canvas for whatever flavor you’re in the mood for. And they are so stupid easy to make.

Then I perused my Pinterest page for some inspiration. I had these cupcakes on my board for awhile and they’ve been on my to-make list since they look so damn delicious and how can you not love apple pie filling? The recipe for these Apple Pie Cupcakes is from Spoonful of Flavor. I tell you what these were so good! I halved the recipe for the cake portion but did make the full batch of apple filling. Thank god I did. I kept doing the ol’ one spoonful for the cupcake, one spoonful for me. I could have eaten all of the filling straight from the bowl, sans cake and frosting. The cake was super moist and flavorful as well. A definite must make again!

I cored the cupcake and spooned enough filling just to fill the hole to the top of the cupcake. Then I piped two circles of vanilla buttercream around the outside to hold in more filling. Then I carefully spooned more filling into the center. These are the perfect fall treat!

I know it’s not really fall but seriously, you should make some of these today and pretend that instead of kicking up five inches of snow, you’re kicking up pretty fall leaves!
