Mojito Cupcakes

One of my favorite drinks, the refreshing Mojito, in cupcake form! It doesn’t get any better than this. The combination of mint and lime is so delicious! Add to that a bit of rum, and you can’t go wrong! I just love a boozy cupcake!

 

 

 

I made these cupcakes two weekends ago in hopes that the nice weather would stick around. That apparently didn’t work since it has been raining for the last week. But I know that summer is just around the corner and it will hit us like a ton of bricks. One day it will suddenly be 90 degrees and humid and we will all be complaining about it. So when the hot weather hits, make some of these cupcakes and guaranteed no one will find anything to complain about!

I used my favorite vanilla cupcake base for these as well as my favorite vanilla frosting base. From there, I added lime zest and juice from 1 small-ish lime. Next time I would probably bump up the amounts of both to really make them sing! I split the amount of milk needed in half and used half white rum (Bacardi) and half milk. I also had some Mojito Libre Swirl from Amoretti. This is the same company I purchased the Orange Cream flavoring for these. I seriously am in love with the flavors that are offered. The options are endless! I added some of the Swirl to both the cake batter and the frosting.

These cupcakes taste like summer. They are definitely going to be made again!

I decorated the finished cupcake with a mint sprig, slice of lime and these adorable straws from Target. I find so much cute stuff in their dollar section, even cake stands!
