I’m not big on Valentine’s Day. I just don’t really get the holiday and what it has become. We should be appreciating the ones we love every day, not just one day a year. My other half thinks like me in this respect so we’ve never really done anything special for it. This year is no different. No gifts, just dinner at home with the dogs. Which is more than enough for me.
I do realize however, that the rest of this crazed world goes ga-ga over pink and red hearts and chocolate today, so despite my feelings about Valentine’s Day and my hatred for the color pink, I bring you these magnificent Strawberry Malt Cupcakes! Aren’t they gorgeous? They would probably be even more gorgeous had I been able to nab some decent photos of them but as soon as they were frosted I whisked them off to be delivered to our favorite bartender. Yeah, I said favorite bartender. What? Like you don’t have one??
These cupcakes have a vanilla malt cake base and are topped off with strawberry buttercream. I pulverized a bag of freeze-dried strawberries for the frosting. I think next time I will just bite the bullet and pay for the already pulverized powder. That stuff gets EVERYWHERE! I garnished these with some Strawberry Wafer Cookies, a Strawberries & Cream Lindt Truffle and my own Valentine sprinkle mix. I really love how these turned out. A little more over the top than what I usually do but so much fun!
So, hug your loved ones today and everyday! And eat some cupcakes!
